For 1 big bread you will need:

  • 400 White flour *
  • 200 Cold Water / if you find it too dry in the bowl while mixing it add more 1-2 tablespoon /
  • 1 salt
  • 1 sugar
  • 1 s.l. oil
  • 5 dry yeast / half packet /
  • Knead to a relatively soft dough that does not stick to the hob, let it rise to room temperature for about 3h. well wrapped with nylon or damp cloth
  • Once it is formed it rises a second time to doubling the volume and baking at 180 degrees without a fan approximately 35 minutes **

* if you wish you can replace 100-200 with whole grain or other flour but you will need to increase the water with a few tablespoons
** For a more crisp crust, you can put a small metal bowl in the oven while it's warm and when you put the bread into it, put some ice clumps. Ice will melt and make steam in the oven, which will help to form the crust.
